Sweet Potato Chips Business Recipe and How to Manage Its Distribution Permit

Chip products based on local raw materials such as sweet potatoes, cassava, and bananas are always in demand due to their distinctive taste and affordable prices.

Ingredients Needed
- Sweet Potatoes: Choose fresh sweet potatoes that are free from pests, blemishes, or rot.
- Palm Oil: Vegetable oil is used as a medium for frying.
- Salt/baking soda/lime water: Used to soak the sweet potatoes to make them crispier.

Equipment Needed
- Stainless steel knife, trimmer, spoon, basin, chip slicer, stove, and a frying container.
Steps to Make Sweet Potato Chips
- Washing and Peeling: First, wash the sweet potatoes to remove dirt, then peel the skin until clean.
- Slicing: Next, slice the sweet potatoes uniformly. The ideal thickness for chips is between 1.5 mm and 2.0 mm.
- Soaking: Soak the sweet potato slices in a baking soda solution for 15 minutes.
- Draining: Drain the sweet potato slices until no water remains.
- Frying: The frying process is done in two stages:
- First Fry: Heat the oil to a warm temperature for 5 minutes.
- Second Fry: Increase the oil temperature until hot and fry until the chips are dry, preferably at 130-140°C over medium heat.
- Draining: After the chips are cooked, drain the excess oil. Using a spinner machine is an effective way to ensure the chips are free from excess oil.
- Adding Seasoning: You can add Magfood Seasoning Powder to enhance the flavor. The addition of seasoning ranges from 6-8% for savory flavors or 10-30% for sweet flavors.
- Packaging and Labeling: Use good quality packaging like PP, Metalized + PP, or PE to extend the shelf life.
Understanding Processed Food Registration Based on Risk Level
In the food product registration process, each product type is categorized by its risk level. For dry snacks like glass chips, the risk level is relatively low. Here are the risk levels:
- High Risk: e.g., baby formula.
- Medium Risk: Products with specific claims like “high fiber.”
- Low Risk: Products using food additives not on the high-risk list.
- Very Low Risk: Products that use no food additives at all.
Requirements to Apply for an SPP-IRT Permit
- Photocopy of ID card (KTP).
- Business Identification Number (NIB).
- Active WhatsApp number and email.
- Data of the food or beverage product being produced.
- The label to be used on the product.
How to Register for SPP-IRT
- Prepare Data and Documents.
- Create an SPP-IRT Application: You need an NIB to apply.
- Fill in the Data: Apply at sppirt.pom.go.id.
- Attend Food Safety Counseling (PKP).
- Prepare Your Business Premises for a Survey.
- Wait for the Certificate to be Issued.
